Potatoes and Green Beans
Ingredients:
-3 cups of green beans (cut into small pieces)
-2 small potatoes (cut into cubes)
-1 small onion
-1 tomato
-3 cloves of garlic
-3 tbl spoon of olive oil
-1 teaspoon of ginger paste ( not heaping)
-1 teaspoon turmeric
-1 teaspoon garam masala
-a pinch of red chili powder
-salt (to taste)
-cilantro leaves
Heat the oil in a frying pan and saute the chopped onions and garlic until browned, and add the ginger and saute for a few minutes. Then add the chopped tomato and saute for 10 minutes on medium- low heat. Add the green beans, potatoes, turmeric, red chili powder,garam masala and 1 cup of water. Cover the pan, and lower the heat.Cook it until the vegetables are tender.
Garnish with cilantro leaves.
It can be served with another Indian dish.

Cauliflower in tomato curry sauce.
Ingredients :
-1 medium cauliflower, cut into little florets
-2 small tomatoes
-1 small onion
-3 tbl spoons of olive oil
-1 teaspoon garam masala
-a pinch of red chili powder
-1 teaspoon curry powder
-1 lemon
-salt (to taste)
Heat olive oil in a skillet on medium heat, and then add chopped onion until browned. Blend thoroughly the tomatoes, onion, garam masala, curry powder, salt and red chili powder to form a smooth paste in a blender. In the same skillet where the onion was sauteed, heat some oil and place the cauliflower florets with a little bit of water and cover it . Cook until the cauliflower becomes tender. Afterwards add the tomato mixture to the skillet and mix the curry well and cook for another few minutes, and add lemon juice.
Garnish with cilantro leaves .
It can be served with another Indian dish and Indian bread

Chole
Chole is one of my favorite Indian dishes .
Ingredients:
-1 can garbanzo beans
-3 tbl spoons of oil
-1 small onion
-1 tea spoon ginger paste
-3 cloves of garlic
-2 small tomatoes
-1 teaspoon cumin powder
1 teaspoon turmeric
-1 teaspoon coriander powder
-a pinch of red chili powder
-1 teaspoon garam masala
-salt (to taste)
Heat the oil in a dutch oven, and add chopped onion, garlic and ginger, and saute over medium heat until browned. Turn the heat down to medium-low and add the chopped tomatoes, cumin powder, turmeric, coriander powder, red chili powder, garam masala and salt to taste.Cook it for another 5 minutes on low heat. After that add the chickpeas to the masala in mix well. Add salt to taste and water to make the gravy-2 cups. Simmer and cook it for 30 minutes with the cover on. When ready remove it from the stove an garnish with coriander leaves.
It can be served with another Indian dish and Indian bread .

Today , I'll make stuffed mushrooms !
Let's put the ingredients together:
- 10 mushrooms
- feta cheese
- Parmesan
-2 tbspoons of yogurt
-a few olives
-half of small yellow onion
-2 cloves of garlic
-parsley
-paprika
-a pinch of red chili powder
-salt
First we need to wash the mushrooms and then cut the stems off of the mushrooms and let them dry for 15 minutes. Afterwards chop the stems, onion and garlic in small pieces and place in a frying pan with some olive oil until it gets soft. When it is ready take the pan from the heat. Mix it with feta cheese, olive pieces, yogurt, parsley, red chili powder, paprika, salt. After all the work, let's fill each mushroom with the mixture that we've made. After we are done filling up the mushrooms, let's sprinkle some Parmesan cheese and small pieces of feta cheese on top of it , and place it in the oven for about 30 minutes.(set the temp at 350 degrees).
When these guys:) are ready place in a plate .
