Potatoes and Green Beans

 

Ingredients:

-3 cups of green beans (cut into small pieces)
-2 small potatoes  (cut into cubes)
-1 small onion
-1 tomato
-3 cloves of garlic
-3 tbl spoon of olive oil
-1 teaspoon of ginger paste ( not heaping)
-1 teaspoon turmeric
-1 teaspoon garam masala
-a pinch of red chili powder
-salt (to taste)
-cilantro leaves

Heat the oil in a frying pan and saute the chopped onions and garlic until browned, and add the ginger and saute for a few minutes. Then add the chopped tomato and saute for 10 minutes on  medium- low heat. Add  the green beans, potatoes, turmeric, red chili powder,garam masala and 1 cup of water. Cover the pan, and lower the heat.Cook it until the vegetables are tender.
 Garnish with cilantro leaves.

 It can be served with another Indian dish.

Cauliflower in tomato curry sauce.

   Ingredients :

-1 medium cauliflower, cut into little florets
-2 small tomatoes
-1 small onion
-3 tbl spoons of olive oil  
-1 teaspoon garam masala
-a pinch of red chili powder
-1 teaspoon curry powder
-1 lemon
-salt (to taste)

 Heat olive oil in a skillet on medium heat, and then add chopped onion until browned. Blend thoroughly the tomatoes, onion, garam masala, curry powder, salt and red chili powder to form a smooth paste in a blender. In the same skillet where the onion was sauteed, heat some oil and place the cauliflower florets with a little bit of water and cover it . Cook until the cauliflower becomes tender. Afterwards add the tomato mixture to the skillet and mix the curry well and cook  for another few minutes, and add lemon juice.
 Garnish with cilantro leaves .

 It can be served with another Indian dish  and Indian bread

Chole

 Chole is one of my favorite Indian dishes .

 Ingredients:
-1 can garbanzo beans
-3 tbl spoons of oil
-1 small onion
-1 tea spoon ginger paste
-3 cloves of garlic
-2 small tomatoes
-1 teaspoon cumin powder
1 teaspoon turmeric
-1 teaspoon coriander powder
-a pinch of red chili powder
-1 teaspoon garam masala
-salt (to taste)


Heat the oil in a dutch oven, and add chopped onion, garlic and ginger, and saute over medium heat until browned. Turn the heat down to medium-low and add the chopped tomatoes, cumin powder, turmeric, coriander powder, red chili powder, garam masala and salt to taste.Cook it for another 5 minutes on low heat. After that add the chickpeas to the masala in mix well. Add salt to taste  and water to make the gravy-2 cups. Simmer and cook it for 30 minutes with the cover on. When ready remove it from the stove an garnish with coriander leaves.

 It can be served with another Indian dish and Indian bread .

Today , I'll make stuffed mushrooms !

 

 Let's put  the ingredients together:
- 10 mushrooms
- feta cheese
- Parmesan
-2 tbspoons of yogurt
-a few olives
-half of small  yellow onion
-2 cloves of garlic
-parsley
-paprika
-a pinch of red chili powder
-salt

First we need to wash the mushrooms and then cut the stems off of the mushrooms and let them dry for 15 minutes. Afterwards chop the stems, onion and garlic in small pieces and place in a frying pan with some olive oil until it gets soft. When it is ready take the pan from the heat. Mix it with feta cheese, olive pieces, yogurt, parsley, red chili powder, paprika, salt. After all the work, let's fill each mushroom with the mixture that we've made. After we are done filling up the mushrooms, let's sprinkle some Parmesan cheese  and small pieces of feta cheese on top of it , and place it in the oven for about 30 minutes.(set the temp at 350 degrees).
 When these guys:) are ready place in a plate .

Baked drumsticks with olives!!!!!:)

 For the baked  drumsticks we'll need the following ingredients:

- 10 drumsticks
-1 tbl spoon of honey
-1 cup of red wine
-4 tbl spoons of tomato ketchup
-1 tea spoon of hot  red sauce
-4 green onion
-3 cloves of garlic
- parsley
-olives
-3 tbl spoon of olive oil
- pepper
- salt

 How to marinate the drumsticks :

 Take a large bowl and pour red wine, honey, ketchup, olive oil, hot sauce, pepper, salt and at the and add the drumsticks and mix well. After that place the bowl in the refrigerator for 3 hours. Take out the bowl from the refrigerator, and the drumsticks with the sauce (where the drumsticks were marinated) in a baking tray with the olives and chopped green onion on top. Afterwords, cover the tray with aluminum foil and place it in the oven and set the temp. at 350 degrees for about 30 minutes. After half an hour  remove the foil and put it back in the oven for another 15 minutes until the drumsticks have been browned .

 Take the tray out of the oven and put the drumsticks on a nice plate and sprinkle some parsley on top.


 It can be served with salad and bred .

Romanian stuffed eggs!! Yummy!!!!!!!!!!! :))



 We'll need the following  ingredients :
-6 eggs
-250 grams of feta cheese
-2 spoons of sour cream or yogurt
-olives
-half a red onion
-a small bunch of parsley
-1 spoon of mayonnaise
-1 spoon of mustard
-pepper
-red chili
-salt

 Preparation
First step is to hard boil the eggs. After the eggs are hard boiled  put them under cold water for a  minute . Take the eggs out and peel off the shell. Cut the eggs in half and the remove the yolks.We need to mash the yolks with a fork until it becomes creamy and then add the feta cheese, the chopped olives, mayo, mustard, finely chopped red onion, cream sauce (yogurt), pepper, red chili,  and salt. With this mixture fill the eggs halves and put on a platter  decorated with olive pieces  and  sprinkle  with paprika  on top.

Romanian eggplant salad !!!!!!!!!!!!!!

 
For the eggplant salad we'll need the following ingredients :

-3 eggplants
-1 small onion
-2 cloves of garlic
-a small bunch of parsley
- a few olives
-2 spoons of mayonnaise
-1 spoon of olive oil
-salt
-black pepper
- paprika

 Let's get started:)
 Wash the eggplants,  and put them in the baking dish , and then place in the oven  until the eggplant gets soft (cooking time should be about 45-50minutes , and the oven temperature  should be about 350 degrees ). And then allow to cool slightly  and then peel. A easy way to clean up the eggplant is to cut the core, and then cut the eggplant in  half using a  baking spoon to gather the insides. The core is placed in a colander and leave to drain for 15 minutes.  Using the blender is much easier and it'll be creamy and smoother . Put the eggplant in the blender bowl  and gradually  add  olive oil,  mayonnaise, parsley, salt, black pepper, paprika. Afterwords, chop finely the red onion and garlic and mix  with the mixture from the blender. When everything is mixed and ready  place it in a nice dish and make a nice decor using parsley  leaves and olives.

 It can be served as an appetizer  with crackers or bread.

Let's try some Romanian food today! How about cabbage rolls with turkey !! Yummy

Romanian cabbage rolls with turkey !!!!!!!!!

 For this recipe  we'll need the following  ingredients :
-1 lb ground turkey
- 1 jar of pickled cabbage  leaves
-1 large onion
-4 cloves of garlic
-6 medium mushrooms
-1 carrot
-1 cup of rice
-2 small cans of tomato sauce
-a small bunch of parsley
-1 egg
-2 bay leaves
-ground black pepper
- paprika
-salt
-4 spoons of olive oil


Clean  and chop  the onion & garlic finely and fry in olive oil until it gets soft, and chop the mushrooms and the carrot  and add in the frying pen with the onion and garlic  for another  5 minutes . After that mix the fried vegetables with the ground turkey, rice, egg, parsley, tomato sauce, salt and  black pepper together.  Afterwords fill the  cabbage leaves with the composition  that you made. Let's see how we can fill the leave , if the leave is big cut in half  and then take a small amount of meat  fill and roll. It is not hard - just a lot of fun to do it. After finishing filling and rolling , we need a dutch oven.

On the bottom  of the pot  we need to  have a layer of cabbage leaves {the ones that are broken or thick} and then layers of the stuffed cabbage leaves and then have  2 bay leaves on top of it. After we'are done arranging the cabbage  leaves in the pot , pour water and the cabbage juice from the jar (if you like it a little bit  sour)  to cover it. Put to boil over low heat. Cooking time will be not less the an hour and a half, and then place the pot in the oven for 15 minutes {350 degrees}. After the cabbage rolls are ready, sprinkle some paprika on top and have a few leaves of parsley , just for the decor.:)







It can be served with either sour cream or yogurt, and either bread or polenta (corn meal).

Today , I'll make Chicken curry:))

-For making Chicken  curry  I'm going to need the fallowing  ingredients:

-  whole cut chicken, skin removed
- 5 tbsp of vegetable oil  { olive oil}
- 3 tbsp of chopped  garlic
- 4 cups of  sliced onions
- 1 stick cinnamon
- 4 green cardamom
-5 cloves
-  4 tsp of ginger paste
-Salt to taste
-  1tsp of red chilli  powder
-  2 small tomatoes
-1 tsp of garam masala

We'll marinade the chicken  in:
-1tsp of garlic paste
-1 tsp of ginger paste
-  1 tbsp of lemon juice
-1 tsp of coriander
-1tsp of turmeric
 1tsp of red chilli

Marinate chicken with  the ingredients  given for marination and keep aside for about 15 minutes.

 Preparation:

Heat the vegetable oil in a saucepan , add onion and garlic and saute  until it turns brown.Add  ginger paste, cinnamon stick, cloves, green cardamom , garam masala, coriander powder and red chilli powder and saute for a minute.  Add tomatoes and  cook till  become soft.After that add  the chicken  and saute for a few minutes. Add 2 cups of water  and  salt. Mix well , cover the saucepan and bring to boil.  Reduce  hit to low  and simmer till chicken is tender.

 It can  be served with rice  or Indian bread.
